No Oil Cooking

Some tools like a non-stick pan are essential. Most veggies already contain a signifigant amount of water and will not have an difficulty browning. 

Greens

Don't overcook fresh, tender greens. Certain veg like spinach, broccoli, green beans, snap peas, can make or break a dish. But they can quickly turn mushy and brown if you overcook them.

Batch Cooking Beans

Every week cook a bag of beans and fill mason jars while still hot and store in the frig. Be sure to season with 2 bay leaves and salt, for pinto or black also add 1 chipotle or adobo pepper and 1 tbsp of liquid smoke. 

Roasted Garlic

Too add more depth, add roasted garlic. Take a whole clove and bake at 400° for 45 min add to almost anything. 

Creaminess

To achieve creaminess without diary, turn to cauliflower, beans, lentils, or mashed sweet potatoes. Blend each with a pinch of salt and you have a creamy, thickening agent. 

Acid/Season @ End

To round out or liven up a dish, add a splash of lemon or lime juice, or vinegar at the end. Always re-taste at the end of cooking and re-season if needed, which almost always.

Substitution

1 overripe banana or 

¼ c silken tofu or 

¼ c fruit or veg puree

1 tbsp gr flax seeds + 3 tbsp water

¼ c chickpea brine

2 tbsp cornstarch + 3 tbsp water
