Portugese Kale Soup

As soon as it gets cold outside in the Fall, I make a big pot of this soup. It is so nourishing and comforting and will warm you up. Just a few simple ingredients, this is a great soup to try.

Ingredients

  • 1 bag of split peas

  • 1/2 head of cabbage

  • 6–8 medium potatoes, chopped

  • 1 chopped destemmed bunch of kale

  • 1 bag of spinach

  • 2 cans (or cooked) of beans (kidney, black, white)

  • 2 bay leaves

  • 1 tbsp salt

  • 1 tbsp of smoked paprika or smoke powder or liquid smoke

  • cracked black pepper

  • splash of apple cider vinegar

 

Method

  • Soak split peas over night the night prior (to cut down in cooking time)

  • Cook split peas in a large stock pot until “melted” or pressure cooker for 20 minutes on high pressure in enough water to cover the peas by 2–3 inches with salt and bay leaves.

  • Add potatoes, cabbage and kale to the soup, cook until tender.

  • Add spinach and cooked beans, add all additional spices, taste, re-season if needed.
