As soon as it gets cold outside in the Fall, I make a big pot of this soup. It is so nourishing and comforting and will warm you up. Just a few simple ingredients, this is a great soup to try.
Ingredients
1 bag of split peas
1/2 head of cabbage
6–8 medium potatoes, chopped
1 chopped destemmed bunch of kale
1 bag of spinach
2 cans (or cooked) of beans (kidney, black, white)
2 bay leaves
1 tbsp salt
1 tbsp of smoked paprika or smoke powder or liquid smoke
cracked black pepper
splash of apple cider vinegar
Method
Soak split peas over night the night prior (to cut down in cooking time)
Cook split peas in a large stock pot until “melted” or pressure cooker for 20 minutes on high pressure in enough water to cover the peas by 2–3 inches with salt and bay leaves.
Add potatoes, cabbage and kale to the soup, cook until tender.
Add spinach and cooked beans, add all additional spices, taste, re-season if needed.
