This recipe is adapted from one of my favorite books: The Veggie-Lover's Sriracha Cookbook by Randy Clemens and is a crowd pleaser and perfect brunch recipe in our household. As a matter of fact, it's Kellie's absolute favorite breakfast recipe for special occasions. Feel free to top with any of your favorite ingredients and buy or make any type of English Muffin you fancy. The best part about vegan Hollandaise is that you will never have to worry about keeping it at temperature to avoid salmonella & it comes together in minutes.
Ingredients
Brine tofu overnight the night before by adding:
1 package thick sliced extra firm tofu into a zip lock bag with 1 tsp veggie bullion
1/2 cup water
1 tbsp apple cider vinegar
1 tsp pink or other sea salt
1/2 tsp of black Himalayan sea salt if you are going for the “eggie” or sulfate taste.
Hollandaise Sauce
1 medium cooked potato smashed or cooked cauliflower
1/2 cup of water
pinch of turmeric
Optional: pinch of smoked paprika
1 tbsp apple cider vinegar
Optional: 1/2 tsp black Himalayan sea salt
1 tsp onion powder of chives or green onion
1 tbsp nutritional yeast flakes
2 tsp white miso
crushed black pepper
Optional: squeeze of lemon juice
2-4 English muffins
1/2 cup Arugula or spinach
1 large flavorful tomato cut into thick slices
1 large ripe avocado, sliced into nice wedges
Top with Everything But the Bagel seasoning & hot sauce if desired!
Method
Brine tofu overnight for for at least a few hours.
Make Sauce by adding all ingredients to a blender cup or in a microwave safe container if using an immersion blender and whip it up until it comes together as a nice sauce. If needed, add more water by the tsp until desired consistency is reached. Heat up the sauce in a microwave or in a pot on the stove. That's it! You're done with the sauce.
In a non-stick pan, place tofu slices and sear on medium heat on all sides until nicely browned.
Prep the rest of the veggies and toast the English muffin slices.
Assemble time: Top each slice of English muffin with avocado slices, arugula, tomato, tofu, drizzle with sauce and add the Everything but the Bagel seasoning and/or hot sauce on top. Enjoy!
