Corn, Mango, Avocado Salsa

As soon as the temperatures rise, and we see the first fresh sweet corn at the market, it's time to start making this. A wonderful appetizer, snack, or a guaranteed favorite to any summer party or picnic. You are welcome to sub any ingredients for preferred ones (if you have fresh peaches or nectarines instead of mango, go for it. If you can only find frozen corn, you can use that). Serve with corn chips.


Ingredients

  • 3 corns on the cobb (roasted til partially blistered on the grill or over a gas flame, or microwaved for 3 minutes or until soft, then cut off the cobb).

  • 2 mangos, diced finely (you want ingredients to be uniform, therefore ideally the size of the corn kernels)

  • 1-2 avocados, diced finely

  • 1-2 fresh limes (zested & juiced)

  • 1 clove of garlic minced or 1 tsp garlic powder

  • pinch of salt

  • Optional: 1 tsp of sweetener of choice depending on sweetness of fruit.

  • Splash of apple cider vinegar

  • Optional: 1/2 cup chopped cilantro

  • Optional: 1/2 diced onion

  • Optional: 1-2 jalapeños or serrano peppers seeded, minced depending on your spice level or 1 finely diced chipotle in adobo


 


Method

  1. Chop all ingredients, put into bowl, mix, taste, adjust seasoning if needed, serve!

  2. Enjoy!
