These are fantastic and super flavorful to make with jackfruit but also quite adaptable to use with anything from beans, lentils to tofu with whatever you have on hand to make the slaw. The technique I'm using to cook the jackfruit does require 1 hr of pressure cooking on high pressure but this allows you to use all of the jackfruit without having to sort through seeds and waste any. I'd suggest to do this step ahead of time.
Ingredients
1 can of green young jackfruit
1/2 cups of water/veggie broth/veg bouillon
1 can of crushed or pureed tomatoes
1 bay leaf
1 tbsp salt
1 tsp of either taco seasoning and/or 1 tsp cumin, smoked paprika, garlic/onion powder
1 tbsp apple cider vinegar
1 tsp agave or maple syrup or sugar
6-8 toasted tortillas of choice
Slaw
1 cup thinly shredded cabbage (purple/white or combination)
1 large carrot julienned
1 red bell pepper julienned
1/4 cup chopped cilantro
1 tbsp apple cider vinegar
1 tsp salt
1/2 tsp sweetener of choice (see options above)
Avocado Crema
1/2-1 avocado
optional: if wanting to use less avocado, substitute with 1/2 cup lima beans or sweet peas
1 tbsp apple cider vinegar and 1 lime (zest and juice)
salt to taste
1/2 tsp chopped garlic or minced garlic
1 tsp cumin
1/4 cup chopped cilantro stems/leaves
1/4 cup or more of water, until the right consistency is achieved.
Top with...
toasted pepita or sunflower seeds
additional lime wedge
additional chopped cilantro
Method
In a pressure cooker, add rinsed can of jackfruit, 1/2 cup of water, veg bullion and bay leaf and put onto full pressure for 1 hr.
Turn on the oven to 450°F.
In a strainer, strain and mash the jackfruit until it starts looking shredded. Mix the jackfruit in a bowl with seasonings, apple cider vinegar, tomatoes and seasoning, then spread over a lined baking sheet and bake for about 30 minutes or until all the moisture is absorbed and the edges look nice and browned.
While jackfruit is baking, make the slaw.
Add all the shredded veg into a bowl and mix with vinegar, sweetener and salt and massage until they are starting to become more pliable.
Make crema: in a blending bowl or blender, add all the ingredients with water and blend until smooth. You can always add more water if needed to thin it out.
Toast tortillas and seeds if topping with seeds.
Assemble tacos and ENJOY!

Notes
You could also leave out the salt if you are following a low sodium diet. If you prefer using tofu or beans, just omit the pressure cooking part and proceed with mixing and making.
