Even though it may feel like a lot of extra work, once you make this mix, you will use it for everything as a base flavor (as you'll see throughout my recipes).
Ingredients
4 dried mushrooms (any kind, shitake or asian are usually the cheapest)
1 cup nutritional yeast
2 tbsp: garlic powder, onion powder
1 tbsp Italian seasoning or 1 tbsp of dried oregano, dried basil
1 tbsp of dried celery
1 tbsp of poultry seasoning (if on hand)
1 tbsp parsley flakes
1 tsp turmeric
1 tbsp black pepper
2 tbsp sea salt
1 bay leaf
1 tbsp paprika or smoked paprika
1 tsp crushed red pepper or chili powder (optional)
Method
In food processor/mini prep/blender add all ingredients. Blend until fine powder.
Keep in a jar or deli cup. Add 1–2 tsp of this per cup of liquid.
Notes
You could also leave out the salt if you are following a low sodium diet. The umami and depth of flavor of this (especially through the mushrooms and nutritional yeast), will give your food an instant punch. Feel free to substitute or leave out whatever spices you may not have on hand.
