Another super versatile recipe that comes together in 5 minutes and is guaranteed to please your guests. While you can make this with the combination of fruits listed here, feel free to substitute any berry combination or even adding melted chocolate for a chocolate mousse (just leave out the citrus for that).
Ingredients
1 package Mori-Nu firm tofu
1 cup of fresh or frozen mango
1/4 cup of fresh of frozen passionfruit (I keep frozen sheets that are sold in tropical stores in the freezer)
1 tbsp sweetener of choice
Zest and juice of 1-2 limes or lemons
sprinkle of salt to taste
Method
Put all ingredients into blender cup and blend until smooth and creamy. Put into the fridge for at least an hour before serving. I shaved some dark chocolate over the version you are seeing in the picture and served them with a few wfpb gf cookies to add some crunchiness.
Notes
If going to a chocolate mousse, melt 1/2 cup of chocolate first, then add to the blender cup with the tofu and additional ingredients. I'd recommend adding either 1 tsp hazelnut, almond or vanilla extract. Since the chocolate will firm up once it cools, this version will be much thicker.
