Smokey Beans w/Veg

Delicious on their own or try one of the variations below.


Ingredients

  • 2 cans of beans (black, pinto, kidney) OR

  • 4 cups of cooked beans from dry beans

  • 1 cup diced onions or 1 tbsp of onion powder (optional)

  • 4-5 cloves of chopped garlic or 1 tbsp of garlic powder (optional)

  • 1 diced jalapeño OR 1 diced chipotle in adobo

  • 1 bay leaf

  • 1 tbsp cumin powder

  • 1 tbsp coriander powder or 1/2 cup cilantro, chopped

  • 1 tbsp veg bouillon

  • 1 lime (zest & juice) OR 1 tbsp apple cider vinegar

  • 1 can crushed tomatoes, 1 can diced, drained

  • 1 tbsp smoked paprika OR 1 tsp smoke powder or liquid smoke

 

Serve with...

  • rice, quinoa, barley, farro, any whole grain!

  • over baked potato or baked sweet potato

  • with a side of whole wheat or gluten free roti


 

Method

  1. In a non-stick pan, brown aromatics (no oil needed) if using! and carrots/bell pepper if using until slightly tender on medium heat, add beans. Stir for 5 min total. If using tomatoes, add those as well. as well as dry spices If making soup, add stock now.

  2. Simmer for 10 min until desired consistency is reached.

  3. Finish with "finishers", taste for seasoning. If using spinach, add in now! If you feel like some of the spices have cooked out throughout the cooking process, feel free to add a dash more of dried spices.

 
Variations

Just beans — cook beans, add a splash of veg stock to get desired consistency. Finish w/ chopped cilantro, lime zest, juice or apple cider vinegar, re-season.


Refried — cook beans, mash a few beans up while frying them up and add just a splash of liquid if needed. Finish w/ chopped cilantro, lime zest, juice or apple cider vinegar, re-season.


Bean soup — 6 cups veggie stock, re-season. If thicker soup is desired, use immersion blender to blend up some of the beans/veg until desired consistency is reached. Finish w/ chopped cilantro, lime zest, juice or apple cider vinegar, re-season.


 

Notes

Everyone's pallet is different. When you are learning to cook and develop flavors, try to taste for the following: Umami, sour, sweet, spicy, sweet until you find the perfect combination. You are cooking for yourself and your loved ones. It needs to make you happy!
