If you miss the comfort of eating Chicken Noodle or Chicken Rice soup that you great up with, give this one a try. It comes together in a flash, especially if you use a pressure cooker. This is a quick dump and go recipe. Tired of plain old soup? Try this combination for a twist. What's your favorite version?
Ingredients
2 cans of chickpeas or 1/2 bag of dry chickpeas
1 cup of barley
10 cups of water
4-5 tbsp of veg bouillon
2 large carrots, sliced
4 stocks of celery, diced
1 onion chopped
4 cloves of garlic, diced
1/4 cup nutritional yeast
1 bay leaf
1 tbsp salt and pepper to taste
Finishers
1 cup frozen or fresh sweet peas
1/4 cup parsley to finish
1 tbsp apple cider vinegar or 1 lemon (zest and juice)
salt to taste
Extra add on if not trying to lose weight: 1 tbsp almond butter
Veggies — load this up with extra veg add ons! From the list below, choose 3-4 cups of veg total!
1/2 head of chopped cauliflower
1 pound of mushrooms (diced)
1 pound diced turnip
2–3 zucchini or summer squash (diced)
1/2 bag of frozen (ensure moisture is squeezed out) or fresh spinach
Method
If using dry chickpeas, cook those first in a pressure cooker unsoaked with 8 cups of water, 1 bay leaf and some salt for 55 minutes on high pressure.
If using canned chickpeas, dump the full cans (including aqua faba aka magic juice that makes any soup better!) into the pressure cooker, add 8 cups of water, and salt and all veggies as well as barley. Cook on high pressure for 10 minutes. Release the pressure, add all other seasonings including veggie bouillon and nutritional yeast as well as any other finishers.
Taste and re-season as needed!
Flavor Variations: Columbian
Add the following to the original ingredients through Finishers:
2 tbsp cumin powder
1 tbsp coriander powder
1/4 cup cilantro
juice and zest of 1-2 limes
Notes
You could also leave out the salt if you are following a low sodium diet. The veg bullion as well as the additional nutritional yeast alongside with the aqua faba, which will give the soup more body, makes this an easy and heartwarming soup.
