Quick and easy brussels

You may already be a fan or you may be looking for a way to prepare these tasty morsels. Look no further. These are great on their own or possibly toss in the sweet & tangy sauce below.


Ingredients

  • 1 pound of brussels, outer leaves/stem removed and cut in half

  • salt

  • 1 tsp of oil (optional) or 1 tsp of aqua faba

 

Method

  1. Prep the brussels and put into a large bowl, toss with lubricant of choice (oil or aqua faba) and salt.

  2. Place in air fryer (if you have one) at 400°F or on a lined baking sheet in a 425°F oven for 10 minutes, turn and keep crisping up for another 10 minutes or until golden brown.

Sauce (Optional)

  • 1 tsp of coriander seeds & 1 tsp of black or red peppercorns toasted in a pan until fragrant

  • 1 tsp of maple syrup or apricot jam

  • 1 tbsp of dijon or spicy brown mustard

  • 1 tbsp apple cider vinegar

  • 1 tsp of veg bouillon or liquid amino or soy sauce of choice

  • 1/2 cup of water

Method

Combine all ingredients in a blender, blend until smooth consistency. Pour over cooked brussels and toss until equally coated. Serve while hot!

 

Notes

These are a favorite in our house on their own or with the special sauce. The sauce is inspired by a restaurant my partner took me to in DC. Co-owned by a top chef contestant Kapnos had the most delicious brussels I had ever tasted.
